We stormed the kitchen of Chicago food blogger Kit Graham
, to watch her chop, sauté, and bake her way through four delicious meals. The end result? A counter teeming with the afternoon’s bounty, not to mention four covetable recipes worthy of our favorite phrase, easy gourmet
While Kit cooked we looked on, eager to offer our services as official taste-testers for the day. Wielding quite the impressive kitchen prowess, Kit churned out four dishes sure to spark delight in cooks and diners alike. In one word, these meals are simple. with toasted walnuts and cranberry dressing
1 lb baby spinach
¼ cup chopped walnuts
½ cup sliced pear
½ white onion
¼ cup blue cheese (optional)
2 tablespoons olive oil
¼ cup cranberries
¼ cup red wine vinegar
2 T honey

½ cup white wine
2 T butter
Fresh lasagna sheets
¾ cup pecorino
½ cup ricotta
½ cup mascarpone
¼ cup milk
¼ cup toasted walnuts
